| Chicken Cacciatore with Matzah | ||||||||||||||||||||||||
| 8 - 10 chicken legs Matzah meal 1/4 cup olive oil 2 tablespoons chopped shallots 1 garlic clove, minced 1/4 cup tomato paste 1/2 cup dry white wine 1 teaspoon salt |
1/4 teaspoon white pepper 3/4 cup chicken stock 1/2 bay leaf 1/8 teaspoon thyme 1/2 teaspoon basil 1/8 teaspoon sweet marjoram 1 cup sliced mushrooms |

| Dredge chicken legs with matzah meal and put aside. Saute shallots and garlic in olive oil. Add chicken legs and saute until golden brown. Remove chicken legs and put aside. Add rest of ingredients and combine well. Place chicken in ovenproof dish and pour sauce mixture over it. Cook in a slow oven until done. Serve with boiled potatoes and salad. |
