Here is the recipe that has everyone running for the dessert table after the usual feast at my Mother-in-law's house!
Butterscotch Pie Filling
2 cups brown (golden yellow) sugar
1 cup milk
2 heaping tablespoons corn starch
2 heaping tablespoons butter
1 teaspoon vanilla
3 egg yolks (beaten)
Mix together in a heavy saucepan the sugar, milk, butter and (beaten) eggs.
Stir constantly until mixture begins to boil.
Thicken with the corn starch (mixed with a little water to form a smooth paste).
Continue stirring until thick.
Add vanilla.
Let cool and pour into baked pie shell.
Serve with whipped cream.
