Bread Salad
Salad:

3 cups stale Italian bread cut in 1/2 " cubes
1/2 lb fresh ripe tomatoes, diced
1/2 english cucumber, peeled and diced
1/2 cup thinly sliced red onion
1/2 cup basil leaves, stems removed, finely shredded
Dressing:

1 tablespoon virgin olive oil
3 tablespoons red wine winegar
1 tablespoon balsamic vinegar
1 small garlic clove, minced
Salt and pepper to taste
Whisk together all dressing ingredients and set aside.

Combine all salad ingredients in a large bowl and toss gently.

Drizzle with dressing and toss to coat.
