7-Layer Salad
1 10-oz. bag Italian mix (lettuce)
1 10-oz. bag frozen peas
1 cup grated carrots
2 cups low-fat Hellman's mayonaise
2 tablespoons white sugar
6 hard boiled eggs (crumbled)
6 ounces grated cheddar cheese mix
1/2 pound bacon, cooked, chopped
Spread lettuce mix on bottom of 9"x13" pan. Spread frozen peas evenly over lettuce. Spread grated carrots over peas. Spread mayonaise thinly and evenly over top. Sprinkle with sugar. Refrigerate, covered, for at least 8 hours.

Before serving, spread over eggs, cheddar cheese and bacon.
