Honey Glazed Chicken
1 (4 pound) roasting Chicken
Salt and pepper to taste
1 large apple, peeled, cored, and quartered
1 large onion , sliced
Pinch of cloves, cinnamon
4 TBS. butter, melted
4 TBS. honey, divided

Season the chicken inside and out with salt and pepper to taste. Toss the apple and onion with the clove and cinnamon. Fill cavity of chicken and then sew or tie shut. Brush the chicken with melted butter and place in a roasting pan. Brush two tablespoons of honey on top. Cook for about 1 1/2 hours at 325 degrees, basting frequently. Halfway through the cooking bast on the rest of the honey. Sevre hot.

Marmalade Loaf
1 cup strong black tea(not herbal)
2 cups mixed dried fruit
1 1/2 cups brown sugar
1 egg
4 tbs. orange, lemon, or lime marmalade
4 cups flour
salt, nutmeg, and cinnamon to taste

Soak the dried fruit and sugar in tea; cover and let stand overnight. The next morning, stir in the egg and marmalade; mix thoroughly. Sift flour together with spices and add to marmalade mixture. Pour into greased and lined 9x5 loaf pan. Bake at 350' for 1-1 1/4 hours.

Basic Herbed Honey
1 cup honey
1 sprig or several leaves of the fresh herb of your choice.

Heat the honey over a low flame. Place the herbs in a clean jar and pour the honey over them. Seal and allow to mellow for at least a week before using.

Green Man Salad
5 cups green leaf salad
2 cups fresh dandelion greens
6-8 slices of bacon
2 TBSP. white vinegar
2 tsp. sugar
salt to taste

Remove stems from greens and roughly chop leaves. Cut bacon into 1-inch square pieces and fry until crisp. Pour off the fat, reserving 1/2 cup. Add vinegar, sugar, and salt to the bacon and reserved fat and bring to a boil. Pour dressing over greens, toss and serve.

Rosemary Potatoes
1 1/2 pounds small new potatoes
2 TBSP. Olive oil
1/2 tsp. salt
2 cloves garlic, minced
1 1/2 TBSP. fresh rosemary, chopped

Cover new potatoes with water and bring to a simmer. Cook 5 minutes. Drain and toss potatoes in pan over low heat until outside of potatoes are dry. Add olive oil, salt, garlic and rosemary. Place potatoes in a pan, in one layer, and bake in a 350 degree oven until crispy and browned, about 15-20 minutes.
