India is one of the largest tea producing nations in the world. British rule on India for 2 centuries has only enhanced the love for Tea amongst indians. Most famous is the Darjeeling Tea. North of the country is a 'Tea Lovers' sect while the south of the country is a coffee part. Sipping Tea with Chana Daal Fritters (along with chutney/sauce) while it is snowing/raining outside is something that I would always cherish. Ingredients for Ginger Tea (For 2 cups of tea): *********************************************** Preparation Time: < 10 minutes 2 tbsps Red Label / Lipton / Taj Mahal tea (available in Indian stores, you can also use 2 tea bags instead). American brand of Lipton tea is good as well 2 tbsp sugar (or more accordingly) 2% milk (that's what I always use, if using Skimmed milk, don't add water) Ginger pieces (finely chopped, say 1 teaspoon) Take a small vessel (big enuf for 2 cups of tea), add 1.25 cups of water and keep the water for boil. Add tea leaves, sugar and ginger. Let the water boil. Add 3/4th cup of milk and give it a boil again on medium-hi heat for another 4-5 minutes. Pour tea thru a strainer (if not using tea bags) into a cup. If using tea bags, feel free to put the tea bags in water after removing the staple. Thats it! *********************************************** You can substitute ginger for cardamoms. Do not add both. If using cardamoms, finely crush the seeds before adding them to water (one big cardamom for 2 cups is good enuf). Add the crushed seeds as well as the cover.
