Check out the Raita recipes: Raita - curd and vegetables mixed. Its served along with the main course. There are many variations of Raita, but the most common one is Boondi Raita. Boondi - small yellow colored deep fried balls available at the Indian store. They might be salty or spicy. Here's the recipe: Ingredients: 1 pack of Plain Yoghurt 1 cup Boondi Salt (according to taste) Black pepper (according to spice level) 1 bunch of Cilantro (leaves chopped) 1 tbsp ginger paste Sugar (according to sweetness) - OPTIONAL 1 tbsp red chilly powder (paprika) Beat the yoghurt in a bowl for about a minute. Add chopped cilantro, boondi, salt, chilly powder, pepper, ginger paste. If you like to sweeten it, add sugar or else it can be left spicy. ***************************************** One of my favorites and the most simple ones that I know is Cucumber Raita, its a sweet form of Raita: Ingredients: 3 Cucumbers (peeled) 1 Vanilla Yoghurt pack (the big one) or Plain Yoghurt Sugar (as per need) Method: Empty one vanilla yoghurt in a big bowl. Beat it for 1 minute to make it smooth. Grate the peeled cucumbers and add them to the yoghurt. Mix well, add little sugar if needed and serve chilled. If you are using Plain yoghurt, I would suggest adding lots of sugar, I like it sweet.
