Shrimp Rice Ingredients: ------------ 1 cup washed rice PREFERABLY BASMATI or any long grained rice 6 Jumbo Shrimps (uncooked, cleaned and deveined, you might want to cut the tail as well) 3 tbsp melted butter 2 tbsp chopped garlic (OPTIONAL) 2 onions chopped lengthwise 1 egg 6 cloves 2 tbsp coriander powder 1/2 tsp turmeric 3 green chillies finely chopped 2 bay leaves DRIED Salt to taste 2 medium sized potatoes (cut in 1 inch cubes each) Method: ------- . Marinate shrimps in garlic and beaten egg mixture for about 1-2 hours. . In a deep utensil, heat melted butter. . Once it is hot, add onions and fry until golden brown. . Add cloves, bay leaves (tear them into 2-3 each), green chillies, coriander powder, turmeric and cook for 1-2 minutes on medium flame. . Add shrimps and remaining egg batter and cook for 1 minute. . Add rice and mix well. Add double the quantity of water. Add salt. Stir. Note: Taste the mixture, if you need adjustments do it now. Cover the utensil and cook until rice is done.
