Pav Bhaji

Pav Bhaji (Pav - Bun, Bhaji - Curry) --------- Its a favorite indian snack (quite filling) made of mixed vegetables and most of the times, it substitutes for a light lunch. I have tried to make it simple by using microwave and blender. Ingredients: ************ 2 Medium Onions - finely chopped 1 butter stick 3 Medium sized potatoes - boiled (instead, you can microwave them for 15-20 minutes - all 3 potatoes together) 1 capsicum - finely chopped 1 cup green peas - heat them in the microwave for 3 minutes 5 medium sized tomatoes finely chopped (2 small cans of Hunts chopped tomato) 3 tbsp Pav Bhaji Masala (its a mixture of various spices available at any Indian store. Popular brands - MDH, Badshaah) 1 tbsp ginger (finely chopped) 1 tbsp garlic (finely chopped) Salt - according to taste 1 tbsp Sugar - OPTIONAL 3-5 Green chillies finely chopped (less if you want less spice) Fresh coriander - chopped (not finely) Burger Buns (2 packets ordepeneding) 1 Lemon - Juice Preparation: ************ Take a deep vessel, add half a stick butter, melt it. Add chopped onions, fry until golden brown. Add garlic and ginger and fry about for a minute. Add chopped tomatoes and pav bhaji masala and fry till you see oil starting to separate from tomato+onion mixture (about 10 - 15 minutes on medium heat). Peel and mash the boiled potatoes, add peas, chopped capsicum, green chillies. Add salt and little sugar. Add this mixture to the tomato-onion paste and blend everything in a blender. If the quantity is a lot, blend in 2-3 parts. Take it out in a dish. Add some lemon juice, if needed adjust salt. Decorate with some chopped onions, coriander and a small cube of butter. Take the buns, heat them on a flat vessel and apply butter and reheat. Serve buns and Bhaji (curry) in a plate. Pav Bhaji's done!
