Spinach Cottage Cheese Recipe (Palak Paneer) One of the most simple recipes made out of Spinach in the Indian Cuisine. Its called Palak (Spinach) Paneer (Cottage Cheese). It happens to be a delicacy as well. Its a very healthy dish and its good for the calorie conscious. Its a North Indian dish and needless to say comes with a lotta butter like every North Indian Dish! Butter is however optional. 2 packets finely chopped spinach 4-5 garlic cloves, finely chopped 3 tbsp chopped ginger 1 tbsp cumin Salt to taste 3 tbsp Oil/Butter (or more/less accordingly) 2 tomatoes diced / chopped Lemon Squeezee or 1 Lemon (Juice) I dont add chillies or garam masala just to keep it simple. Boil water in a vessel. Empty Spinach in it and let it boil for about 10 minutes. Drain water (preserve the stock for further use). Blend spinach in the blender till its a paste (add the stock for uniform blending). Take a deep vessel, add butter/oil, cumin seeds, allow them to crackle. Add ginger, garlic, tomatoes and saute for 3-5 minutes. Add spinach and the remaining stock, it there is too much stock, dont add all. Add about 2 cups at the most. Mix and then add Salt according to taste. Add lemon juice. Add Paneer (cubes of cottage cheese) or Paneer (from the indian store) or Tofu cubes. Some recipes allow deep frying of Paneer before its added to Spinach, but I detest. You can add more butter once you pour the curry in a dish. Its done!
