Lemon Rice: Lemon Rice is a very simple preparation. The best rice to use for Lemon Rice is leftover cooked long grain rice. It tastes best with leftover rice. Ingredients: ----------- 3 cups Cooked Rice 1 medium White Onion - Roughly Cooked Juice of 1 Lemon 2 tbsp Cilantro - Chopped 1 tsp Mustard seeds 1 tsp Cumin seeds 2 green Chillies - Roughly Chopped 1/2 tsp Turmeric powder 1 tbsp Oil 1 tsp Sugar 7-8 Peanuts (OPTIONAL) 4-5 Curry leaves / Kaffir Lime leaves (OPTIONAL) Method of Preparation: ---------------------- . Heat oil in a pot. Once heated over medium-high heat, add mustard seeds. Allow mustard seeds to crackle. . Add cumin seeds and chopped onions. Saute till onions turn translucent. . Add curry leaves, peanuts, turmeric powder, green chillies. Stir for a minute. . Add rice and mix well. Do not break the rice in the process of mixing. . Add salt, sugar and lemon juice. Mix again. . Top it with chopped cilantro and serve hot. Note: Sometimes leftover rice may form lumps, be sure to separate the rice before adding to the mixture.
