Veg. Green Kebabs

Hi, Kebabs have always been associated as a non-vegetarian dish. More so, with beef, mutton, chicken or even fish kebabs. The Kebab mentioned below is a kebab that is made of vegetables and that too, green vegetables. Ingredients: ************ 4 medium sized potatoes (boiled) - You can microwave them for 25 mins instead. 10 nos. green chillies (finely chopped) 1 packet chopped spinach 2 cups green peas Salt to taste 1 tbsp Black pepper powder 4 tbsp ginger (chopped) 1 cup bread crumbs 1/2 cup Semolina Oil for frying (canola or vegetable oil) Preparation: ************ Peel and mash boiled potatoes. Put water for a boil in a vessel, add green peas and spinach and let it boil for 5 minutes. Drain the water and blend the mixture after adding chopped green chillies. Add this puree to mashed potatoes. Add salt, pepper, bread crumbs, ginger and mix well. If this mixture is kinda wet, add more bread crumbs, the mixture should be thick enough to form a ball or fit in a heart shaped mould (heart shaped cookie cutter is fine). Make heart shaped cutlets (kebabs). Coat them with Semolina and deep fry in hot oil. Let them turn golden brown, take them out and serve hot with tomato ketchup or chutney.
