Egg Curry

Ingredients: ----------- 3 medium sized onions finely chopped 3 tbsp oil 5 medium sized tomatoes finely chopped 4-5 green chillies chopped 1 tsp turmeric 2 tbsp coriander powder 1 tbsp cumin powder 6-7 chopped garlic cloves 2-3 tbsp chopped ginger salt to taste 4 boiled eggs 3 pieces of bay leaf Method: ------ Most curries follow this method and some of them will have Garam Masala added to make it more spicy. I always avoid using Garam masala unless absolutely necessary. Heat oil in a deep utensil. Add onions and fry them till golden brown. Use more oil if needed. Then, dd ginger and garlic, bay leaf (tear) and stir for a minute or two. Add coriander powder, turmeric, green chillies, cumin powder and fry them for another minute. All the spices need to be fried for a minute to enhance flavor. Add finely chopped tomatoes and keep mixing until oil separates from this mixture (about 10 minutes on medium-high heat). Add 3-4 cups water and let the curry boil. Cut each boiled egg into 2 and add it to the curry. Switch off gas. Curry's done. It can be served with Rotis or Rice or both :) Ronnie
