Chicken Vindaloo

Hi, I had earlier received some emails with regards to the recipe for Chicken Vindaloo. The preparation is a bit complex but at the end of it, its worth it! Hope you like it: Ingredients: ------------ 4 medium potatoes 1 kg boneless chicken or less salt to taste oil as required 2 tbsp cumin seeds (whole) 1 tbsp black peppercorns 1 tbsp cardamom seeds 2-3 cinammon sticks 1 tbsp fenugreek seeds 1 tbsp black mustard seeds 5 tbsp vinegar 1 tbsp salt 1 tbsp cayenne pepper 1 tbsp brown sugar 4 onions 1 can tomato sauce (or more accordingly) 10 garlic cloves + 6 inch ginger (finely chop, add 5 tbsp water and make a paste) To make it simple, I have divided the recipe in 3 parts for you: 1. Potatoes 2. Chicken 3. Curry Paste 1. Potatoes - Wash the potatoes. Cut them from the center into 4 pieces. Take a pan. Put some oil and fry the potatoes - like you do in home fries. Dont cook them, just slightly brown them. 2. Chicken - 1 kg of chicken. You may want to use boneless if you wish to. Clean the skin/fat and wash chicken. Cut into cubes (1.5 inch cube). 3. Curry paste - Impt. 2 tbsp cumin seeds (whole) 1 tbsp black peppercorns 1 tbsp cardamom seeds 2-3 cinammon sticks 1 tbsp fenugreek seeds 1 tbsp black mustard seeds Grind these spices together and set aside. Then add to this spice mixture: 5 tbsp vinegar 1 tbsp salt 1 tbsp cayenne pepper 1 tbsp brown sugar Chop onions and fry them till golden dark brown. Remove the onions and put them in a blender. Add 2-3 tbsp water to make the onion paste. Add this onion mixture to the above spice mixture. This is called vindaloo paste. ----- Add some oil in pan, to it, add garlic chopped cloves and chopped ginger paste mixture and cook for 2 minutes. Add 1 tbsp coriander powder and 1 tbsp turmeric powder to this mixture. Add chicken pieces and brown them lightly. Then add vindaloo paste, tomato sauce and potatoes to the chicken. Salt to taste. 1 cup water or more according to the gravy desired. Simmer for one hour or till the time potatoes are cooked. Serve over a bed of rice.
