MEXICAN BREAD PUDDING

1and 1/4 cups water
1 and 1/3 cups brown sugar
3 cinnamon sticks
5 cups French bread, cubed
1/4 cup sliced almonds
1/3 cup raisins
1/4 cup butter

Combine water, brown sugar and cinnamon sticks in a saucepan and simmer for 15 minutes. Remove Cinnamon sticks and discard.
Combine bread, almonds, raisins and butter and mix well.
Pour sugar mixture over bread mixture and mix.
Spray an 8-inch baking pan with cooking spray and place mixture in pan.
Chill for 1 hour and remove.
Top with Monterey Jack cheese, cover with foil and bake for 25 minutes at 350 degrees.
Remove foil and bake an additional 10 minutes.
Serve warm.
