| Greek Pork Chops
3 Tbsps all-purpose flour
1/4 tsp salt
1/2 tsp pepper,divided
4 (1 1/2 inch thick) boneless pork chops
3 Tbsps olive oil, divided
3 garlic cloves, pressed
3/4 c. chicken broth
1/4 c. whipping cream or light sour cream
2 Tbsps lemon juice
1/2 tsp dried oregano
1/2 tsp dried parsley
1/2 c. crumbled feta cheese
STIR together all-purpose flour, salt, and 1/2 tsp pepper; dredge pork chops in mixture
COOK pork chops in 2 Tbsps hot oil in a large skillet over medium high heat, 3-4 minutes
on each side. Remove from pan and set aside.
ADD remaining Tbsp oil to skillet; add garlic and saute until tender. Add chicken broth,
whipping cream, or sour cream, lemon juice, and remaining 1/4 tsp pepper.
COOK ten minutes, or until mixture is reduced by half. Stir in herbs; add pork chops and
cook two minutes. Sprinkle pork chops with crumbled feta cheese.
Yield: 4 servings
