Chicken Caprese with Tomato-Basil Cream Sauce

2/3 cup Italian bread crumbs
1/3 cup crumbled feta cheese
1 Tbsp chopped fresh or 1 tsp dried basil
1/4 tsp salt
1/4 tsp pepper
3 Tbsp olive oil
2 Tbsp lemon juice
4 skinless, boneless chicken breast halves
Tomato-Basil Cream Sauce
Garnishes: lemon slices, basil sprigs

STIR together first 5 ingredients in a shallow bowl. Whisk together olive oil and lemon
juice until blended. Dip chicken into olive oil mixture, and dredge in bread crumb mixture,
pressing to coat. Place in a lightly greased 11 X 7 inch baking dish.
BAKE at 375 for 30 minutes or until chicken is done.
Serve with Tomato-Basil Cream Sauce; garnish, if desired.
Yield: 4 servings
Prep: 20 min., Bake: 30 min.

Tomato-Basil Cream Sauce:
1 cup spaghetti sauce
2 Tbsps light sour cream
1 Tbsp chopped fresh or 1 tsp dried basil
COOK all ingredients in a small sauce pan over low heat, stirring often, 5 minutes or until
thoroughly heated.
Yield: 1 cup
Prep: 3 min., Cook: 5 min.
