don't claim to have written these,
I just wanted to share some of my favorites.
Salsa Pronto
1
can ( 14 1/2 oz.)
Mexican style stewed tomatoes
1/4 cup finely chopped onion
2 tbs. chopped fresh cilantro
1 sm.clove garlic, minced
1/8 tsp. hot pepper sause
tortilla chips
Place
tomatoes in blender. Cover and process on low
for 2 seconds to chop tomatoes. Combine with onion, cilantro
lemon pepper, garlic, and pepper sauce. Add additional pepper if
your
really brave. Serve with chips and margaritas. Makes 2 cups
Guacamole
3
ripe medium avocados, seeded and peeled
2 tbs. Reallime lime juice, or juice from half a real lime
1/2 tsp each of garlic salt, sugar, pepper
In
blender or food processor mash avocados. Add remaining
ingredients
mix well. Chill to blend flavors. Garnish if desired. Serve with
chips.
Chili Con Queso
1
package of velveeta cheese
1 can rotel tomatoes
1/4 cup freshly chopped cilantro
Melt
cheese with rotel, and serve hot with chips and margaritas.
(ok, so i like margaritas)
Texas Fajita Chili
1
1/4 cups chopped onion
1 cup chopped green bell pepper
1 tbs veg. oil
2 cans ( 15 1/4 oz. each )kidney or pinto beans
1 lb shredded, cooked beef or pork, or both
1 can whole peeled tomatoes, undrained, und cut up
1 cup lawry's fajita skillet sauce
1 can whole kernel corn, drained
1/2 cup tomatoe juice or beer
1 1/2 tsp. chili powder
In
large skillet saute' onion and bell pepper in oil 10 mins. or
until tender. Stir in beans, meat, tomatoes, sauce, corn, tomatoe
juice
and chili powder. Bring to boil; reduce heat and cover, simmer
for 20 mins.
Fried Jalapenos
1
14-oz. can whole jalapenos
about 1/2 cup longhorn cheese, grated fine
flour
2 eggs
1/2 cup milk
oil for deep frying
Cup
caps off jalapenos and carefully scoop out seeds and membrane
without tearing the peppers. Stuff each one with about 1/2 tsp
grated
cheese, pressing it down into the pepper with your lil finger.
Mix eggs
and milk well. Roll pepper in flour, then in egg mix. and again
in flour.
Set aside to allow the coating to set while you raise the temp of
the oil
to 350* Deep fry the peppers until they are browned ( no more
then
one min ) Do not serve to cowards or yankees.
Barbecue Mop (wes Gully)
makes 1 quart
1
1/2 tsp salt..............................1 tsp. louisiana hot
sauce
1 1/2 tsp dry mustard........................2/3 cup
worcestershire sauce
1 tsp. garlic powder......................1/3 cup apple cider
vinegar
1/2 tsp ground bay leaf..........................2 2/3 cup beef
stock
1 tsp. chili powder......................................1/3 cup
cooking oil
1 1/2 tsp paprika
Mix
and keep in fridge. The more you use it the more it
inhances the flavor, cause of the meat juices,
