Ever
get tired of those lil critters running up and down your roof,
Lets get even,, (here squirrel squirrel.)
Squirrel Pie
( rabbit or other game can be used for this one)
1
1/2 to 2 lb. squirrel
1/2 block butter
4 tbsp. flour
Onions, cut fine
Parsley, chopped fine
1 sweet pepper, minced
1 stalk celery
Clean
squirrel as you would any other wild game. Cut into
fours. Boil until tender with onion, sweet pepper and celery.
Strain, Chop meat into small pieces. Melt butter, When hot
stir in flour for roux. add chopped onions and parsley. Add meat,
Pour in broth, Cook over a low fire about 20 mins. then pour,
using regular pie dough. Top with pie pastry and bake.
Squirrel Jambalaya

med. squirrel
salt and pepper to taste
3 tbsp. oil
2 lg. onions, chopped
3 stalks celery, chopped
1 clove garlic, chopped
1/4 green pepper, chopped
4 tbsp, chopped parsley
2 cups uncooked rice, washed
2 tsp. salt
Cut
squirrel into serving pieces and season well.
Saute in oil until brown, remove from skillet.
Saute onions, celery, garlic, green pepper, and parsley
in oil until wilted. Put squirrel back into skillet. cover
Cook slowly about 30 mins or until squirrel is tender.
Add rice and water, Stir thoroughly. Add salt. Cook
slowly about 30 mins, or until rice is tender.
