I just wanted to share some of my favorites.
Cajun Rice Fritters
1
cup rice ( boiled )
3/4 cup milk
1 1/2 cups flour
1 egg
3/4 tsp.salt
1/4 tsp. pepper
2 tsp. baking powder
paprika
Combine
all dry ingredients. Add beaten egg and milk and blend to a
smooth batter. Stir in the rice. Drop by tablespoon into deep hot
fat and
cook until golden brown. Drain on absorbent paper. May be served
with a
cheese sauce if desired. Serves 4 - 6.
Shrimp Rice Dressing
3
cups cooked rice
2 lbs. raw shrimp
1 can stewed tomatoes
salt, pepper to taste
1 cup chopped onions, celery
1/2 cup chopped bell pepper
1/2 cup salad oil
1/2 onion tops
1/2 parsley
Place
oil in heavy pot over medium heat. Add onions, celery, and bell
pepper.
Cook untill wilted. Add tomatoes and tomatoe sauce. Season to
taste with salt & pepper.
Cook uncovered about 40 mins. Add chopped raw shrimp Cook 20
mins. Add cooked rice,
green onion tops and parsley and steam for 5 mins. Serve with
green salad and hot garlic toast.
Rice 'N' Tomatoes
1
cup uncooked rice
1/2 cup chopped onions
2 tbs. butter or marg.
1 cup beef broth
3 med. fully ripe tomatoes, chopped or
1 can ( 14-1/2 to 16 oz. tomatoes-cut up )
1 tsp. salt
1/4 tsp. seasoned pepper
Cook
rice and onions in butter until rice is golden. about 20 mins.
Add broth, tomatoes, and seasonings. Heat to boiling. stir once.
reduce heat
cover, and simmer about 18 mins, or until rice is tender and
liquid is absorbed. Fluff
lightly with a fork. Makes 6 servings, or 1 texas size serving.
