folks, the people down deep in the south do eat these, Nutrias
are
mostly located in southern louisiana and mississippi areas. They
Look just
like a black rat and can get as big as huge domestic cats.
Roasted Nutria with Onions
Skin
nutria, clean and remove particulary. glands along joints
and back, Boil about 10-15 mins. While boiling in iron pot, fry
onions
Add nutria and cook slowly, basting with oil and onions and
seasonings,
salt and pepper to taste. Serve with boiled irish potatoes or
yams
Muskrat may be prepared in like manner
