Potato Candy
1 med peeled potato-cooked
Mash potato. Add 1 t vanilla and 1/4 c powdered sugar. Stir.
Continue to add additional powdered sugar and stirring until a white
dough starts to form.
Set dough onto a powdered surface. Roll into a long rectangle
about 8 inches wide.
Spread peanut butter over dough.
Using a long side, Gently roll dough inward toward the other long side.
Pinch together to seal.
Cut long roll into 1/2 inch pieces of candy and lay out on waxed paper.
Refrigerate or freeze. Will keep for months in freezer.
