Oven-Fried Chicken

Servings: 2

1/4 cup margarine

1/2 cup flour

1/2 teaspoon pepper

1/2 teaspoon salt

2 pieces of chicken, thighs, wings, or breasts

Preheat oven to 350mF. Place margarine in the bottom of a 8-inch square, non-stick pan and put pan in oven to melt margarine. Combine the flour, salt, and pepper. Rinse the chicken pieces and pat dry with paper towels. Put the flour mixture in a large freezer bag. Put one piece of chicken in the bag. Twist bag closed. Shake bag vigourously to coat chicken with flour mixture. Repeat with other piece of chicken. Remove pan from oven. Tilt pan to coat bottom of pan with melted margarine. Place the coated chicken pieces in the pan. Bake for 20 minutes. Turn over chicken pieces. Bake for another 20 minutes or until juices run clear when chicken is pricked with a fork.

Meatballs in Cranberry Sauce

Servings: 8

1 egg

1 lb. ground chicken hearts

1/2 cup fresh bread crumbs

2 cups cranberry sauce

1/2 cup chopped onion

2 tablespoons Worcestershire sauce

2 tablespoons packed brown sugar

In bowl, beat egg; stir in chicken and bread crumbs until combined. Shape into 1-inch balls. Arrange in single layer in shallow baking dish. Bake at 305mF for 25 minutes. Meanwhile, in a saucepan, combine cranberry sauce, chopped onion, Worcestershire sauce, and brown sugar. Cook over medium heat, stirring occasionally, until hot. Add meatball. Simmer until well coated.

Chicken a la King

Servings: 2

3 tablespoons margarine

1/4 medium green pepper, chopped

3 mushrooms, sliced

1 green onion, chopped or 1/4 cup onion, chopped

3 tablespoons flour

2 cups milk

2 - 3 cups cooked chicken, chopped

Salt and pepper, to taste

Melt margarine in a large, heavy-bottomed frying pan. Add vegetables and mushrooms; saute until vegetables are tender. Gradually add flour, stirring well between additions. Gradually add milk, stirring well between additions. Stir, almost constantly, until mixture thickens. Add chicken; combine well. Heat over medium-low heat until chicken is heated.

Cranberry Chicken

Serves: 4 - 6

1/2 cup flour

1/2 teaspoon pepper

1/2 teaspoon salt

1 frying chicken, cut up

2 tablespoons vegetable oil

2 cups jellied cranberry sauce

1/2 cup chopped onion

2 tablespoons Worcestershire sauce

1/4 cup packed brown sugar

In a wide, shallow bowl or dish, combine the flour, salt and pepper. Rinse the chicken pieces and pat dry with paper towels. Dredge the chicken pieces in the flour mixture. Fry the chicken pieces until they are golden brown. Place the fried chicken pieces in a casserole dish. Preheat oven to 350mF. Mix the remaining ingredients. Pour the mixture over the chicken pieces. Baste and turn chicken occasionally. Bake for 1 hour.

Crispy Oven Chicken

This recipe makes great use of leftovers. To make the bread crumbs, use either stale bread or the heels of a loaf of bread. The plastic bag leftover in an empty box of cereal is perfect for shaking the chicken pieces in.

Serves: 2

2 slices of bread

1/2 teaspoon salt

1/4 teaspoon garlic powder

1/4 teaspoon onion salt

1/4 teaspoon paprika

1/8 teaspoon pepper

1 egg

1 teaspoon milk, beaten

3 chicken thighs, 4 chicken wings, or 3 chicken breasts

Tear slices of bread into small pieces. In a food processor, process pieces of bread until they become fine bread crumbs. Add salt and spices; pulse for a couple of seconds to combine. Pour breadcrumb mixture into plastic bag. Mix egg and milk together. Rinse chicken pieces and pat dry with paper towels. Dredge the chicken pieces in egg mixture. One at a time, shake chicken pieces in bag of crumbs. Place chicken pieces in lightly oiled baking dish. Bake at 400mF for 20 minutes. Turn pieces over. Bake for another 20 minutes, or until done.

Sliced Turkey Submarine

The construction of a submarine sandwich may appear to be so simple as to not merit description; however, there are those among us who were not taught to make a good submarine.

Servings: 1

1 submarine roll

Mayonnaise

2 lettuce leaves

2 turkey slices

4 tomatoe slices

2 slices processed cheese

If necessary, horizontally split roll. Spread submarine-halves with a thin layer of mayonnaise. Arrange lettuce leaves; turkey slices on lettuce leaves; tomatoe slices on turkey, and processed cheese on tomatoes.

Submarine sandwich sandwich will be easier to slice in half and/or eat if you wrap it in plastic wrap and chill it slightly in advance.
