Newfoundland Cuisine: (i.e., what to do with all those blueberries!)
Blueberry Oatmeal Bake
Servings: 8
1-1/4 cups rolled oats
1/4 teaspoon cinnamon
1/4 cup sugar
2 tablespoons margarine, melted
3 cups blueberries
Preheat oven to 350mF. Mix oats, cinnamon, sugar, and melted margarine until crumbly. Place 1/2 of the berries in the bottom of a greased 8-inch square pan. Cover with 1/2 of the crumb mixture. Repeat. Bake for 25 minutes, or until browned.
Blueberry Muffins
Servings: 9
1 egg, lightly beaten
1/2 cup milk
1/4 cup margarine, melted
1-1/2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup sugar
1 cup blueberries, fresh or frozen
Preheat oven to 400mF. Mix egg, milk, and margarine. Combine the flour, baking powder, salt, and sugar and add to the first mixture, stirring just enough to moisten the flour. Gently fold in the blueberries. If using frozen blueberries, do not thaw them. Fill either greased muffin pans or muffin pans lined with baking cups 2/3 full. Bake for 20 to 25 minutes, or until golden brown.

If you are concerned about the sugar content in recipes, the amount of sugar in this recipe may be reduced successfully.
Blueberry Pancakes
One summer, I went to Port Blandford, Bonavista Bay, Newfoundland to visit my grandmother. Each morning she told me to go and pick some blueberries. I was only gone for a few minutes. Blueberries grow there like a blue carpet alongside the road.

1 egg
1/4 cup milk
3/4 cup milk
1 tablespoon sugar
2 tablespoons margarine, melted
3 teaspoons baking powder
1/2 teaspoon salt
1 cup flour
1/2 - 1 cup fresh blueberries
Beat egg well. Combine egg, flour, water, and 1/4 cup milk; beat with a whisk until foamy. Beat in remaining ingredients until smooth. Fold in blueberries. Lightly grease frying pan with vegetable oil. Heat pan over medium-high heat. Pour about 1/4 cup batter into frying pan. Tilt and rotate frying pan to spread batter slightly. Cook pancake until puffed, full of bubbles, and golden brown around edges. Turn and cook other side until golden brown.
