| JOKER'S BEER BATTERED CHICKEN 1 cup flour 2 egg yokes (save whites) 3 tbls. of olive oil 1/2 cup of room temp beer 1/4 cup parsley 1/2 tsp. Italian Seasoning 1/4 tps. Thyme mix with a whisk let stand for 1 hr. at room temp. MARINADE 1/2 cup parsley 2 green onions 1/4 tsp. Thyme 1 glove of garlic (minched) 2 tbs. lemon juice 1/4 tsp. basil wine to cover chicken (let stand for one hour) Now... cut chicken in 1/8 pieces (filet) and pound out... Add marinade Combined to egg whites and whisk briskly Add to batter and fold.. Fill up frying pan with 1/2 in of olive oil. Heat to just barly smoking and turn down the flame and fry to golden brown |
| JEN'S BRUSCHETTA 10 Roma tomatoes (ripe but hard) 1/2 cup med purple onions 1/4 cup chopped garlic 1/2 cup olive oil 1/2/ cup balsamic vinegar (more if needed) 1/4 tsp. salt 1/8 tsp.pepper 2 tsp.Italian Seasoning 4 basil leafs (chopped) 1/4 tsp. Rosemary Marinate over night, stir every once in a while.. Serve on cut Italian Bread |

| JOKER'S FRENCH TOAST 4 egg whites. 1 egg (with yoke) 1 tbs. light brown sugar 1 1/4 tsp. cimimmon 1 1/4 tsp vinalla extract 3 - 4 bananas Mix all above except bananas. Dip and cook NOTE: When you flip in pan cover with butter.. Place bananas sliced 1/4 inch thick (cut sideways) on top of cooked french toast. Sprinke with brown sugar. Place french toast on place and circle with syrup. |

| DENISE'S STUFFED MUSHROOMS 5 small boxes of fresh mushrooms Italian Bread crumbs 1/4 tps. Italian Seasoning. White cooking wine 2 green onions (chopped fine) 4 cloves of garlis (chopped fine) 1/4 tps oragano 1/4 tps Salt 1/4 tps Pepper 1/4 tps soy sauce 1 tbs. ramano cheese Pull stems out of Mushrooms and chop fine Put mushroom caps in buttered pan. Sprinke with white cooking wine Sautee mushroom cap, onion , garlic and seasoning. (Don't over cook) After they cook for a while add a little white wine 1/4 cup and 1/4 tps soy sauce. Take sautee from pan, add bread crumbs and ramano cheese until mixture is thick enough to stuff mushrooms. Stuff mushrooms and cover pan with foil (buttered) Bake for about 20-25 mins at 350. |
