Red Pepper Soup

3 Tbs butter
3 large sweet red peppers
1 medium onion, finely chopped
1/4 tsp ground cumin
pinch cayenne pepper

A Regular Guys Recipe

3 1/2 cups chicken or vegetable stock
2 tsp lemon juice
dash salt
parsley sprigs (for garnish)

In a 3 quart saucepan over medium heat, melt butter.  Seed peppers and chop finely then put into pot with melted butter.  Cook several minutes until peppers begin to soften.  Add chopped onions and continue cooking until onions are soft and translucent - not browned.  Mix in the cumin and cayenne and add the chicken stock.

Bring to a boil, cover, reduce heat and simmer 20 minutes.  Remove from heat and puree in a blender or food processor.  Return puree to the sauce pan, mix in lemon juice and add salt as needed.  Reheat and serve in warmed bowls garnished with parsley.
