Mushroom Broth

1 pound diced mature mushrooms
2 ribs celery, diced
1 diced carrot
1 small onion, diced
6 cups chicken or beef stock
Dry sherry

A Regular Guys Recipe

Put the vegetables into the broth and simmer partially covered for about 45 minutes.  Strain the broth.  Add to each bowl 1 Tbs dry sherry.
