2 cups flour
12 packets Equal sweetener
1/8 tsp salt
1 stick cold butter cut into pieces
1 egg
1 TBS milk
2 tsp grated lemon peel
2/3 cup seedles raspberry spreadable fruit
1 tsp cornstarch
1/2 cup chopped toasted almonds

A Regular Guys Recipe

Combine flour, sweetener, and salt in a medium bowl.  Cut in butter with a pastry blender until mixture resembles coarse crumbs.  Mix in egg, milk and lemon peel.  (Mixture will be crumbly)

Press mixture evenly onto bottom of a greased 11 x 7 inch baking dish.  Bake at 400 degrees until edges of crust are browned -- about 15 minutes.  Cool on wire rack.  Retain over temperature.

Mix the spreadable fruit and cornstarch in a small saucepan and heat to boiling.  Boil until thickened, stirring constantly -- about 1 minute.  Cool slightly.

Spread mixture evenly over the cooled crust.  Sprinkle with almonds.

Return to over and bake until the fruit is thick and bubbly -- about 15 minutes.  Cool on wire rack.  Cut into bars.
