4 salmon steaks Juice of 1 lemon 1 small can diced tomato (omit juice) 4 scallions, chopped 2 tsp fresh ginger root, finely minced 1 TBS balsamic vinager 2 mangoes (or peaches), diced |

In a bowl, mix the tomato, scallions, ginger, mango and vinager to make a salsa. this can be prepared ahead of time and refrigerated.
Sprinkle the salmon steaks with lemon juice and grill them 5-6 minutes on each side either on a charcoal grill or under the broiler. Top each steak with salsa and serve. |
