Chop the onions very fine. Melt the butter in a saucepan and brown the onions in the butter (you can add a TBS of olive oil if you like to keep the butter from burning.) After a few minutes, stir in the flour. Then add the garlic, thyme, bay leaves and parsley. Reduce heat and cook five minutes more, making sure not to let it burn or brown too much. Now add the chili pepper and tomatos and cook slowly for 10 minutes more. |
