Jambalaya

2 pounds boiled shrimp (use our recipe )
1 1/2 cups rice
1 28oz can crushed tomato
2 medium onions
Cayenne pepper to taste
2 TBS butter
1 TBS flour
1/2 tsp chili pepper
3 quarts oyster liquor or chicken broth
2 cloves garlic
2 sprigs Thyme
2 sprigs Parsley
2 bay leaves
salt and pepper to taste

A Regular Guys Recipe

Chop the onions very fine.  Melt the butter in a saucepan and brown the onions in the butter (you can add a TBS of olive oil if you like to keep the butter from burning.)  After a few minutes, stir in the flour.  Then add the garlic, thyme, bay leaves and parsley.  Reduce heat and cook five minutes more, making sure not to let it burn or brown too much.  Now add the chili pepper and tomatos and cook slowly for 10 minutes more.

In a separate pan, heat the oyster liquor or chicken broth to boiling.  Add this to the tomato mixture and bring everything to a boil and then add the shrimp (which have already been boiled).  Boil the mixture for five minutes and then add the rice.  Season well with salt, pepper and cayenne pepper.  Let this boil for 30-45 minutes, stirring occasionally.  Serve hot.
