Turkey Stuffing

16oz loaf of bread, dried and cubed
2 cans chicken broth
2 stalks celery
2 medium onions, chopped
1/2 tsp salt
1/2 tsp pepper
4 tsp poultry seasoning
1 TBS celery seed
3 eggs, beaten
1 cup chopped turkey

Begin drying bread two days early by laying out slices and turning occasionally.  Once dry cut into cubes.  (if you did not plan ahead, dry bread on a cookie sheet for 3-4 hours in a 275 degree oven -- not as good but it works in a pinch.)

Heat broth in a saucepan.  In a large bowl combine bread, celery, onions and seasonings.  Toss thoroughly, adding broth and beaten eggs  until moistened.  Add chopped turkey.  Continue to add broth until the consistency is like chunky applesauce.

Bake in a greased 3-quart casserole dish at 375 degrees for 45-60 minutes
