Indian Sweet Potato Patties

1 can (23 oz) sweet potatoes or yams
3 TBS ground almonds or cashews
3 TBS ground sunflower seeds
3 TBS grated coconut
1/2 tsp cayenne
1/2 tsp cumin
1 tsp coriander
1 TBS maple sugar (or syrup)
1 tsp salt
3 TBS chick pea flour
2 TBS butter

A Regular Guys Recipe

In a bowl, mash the sweet potatoes.  Mix in the ground nuts and sunflower seeds (Hint -- an electric coffee grinder is great for ginding nuts and seeds).  Add the coconut, cayenne, cumin, coriander, maple sugar, salt and chick pea flour and mix well.  Use your hands (coat them with some oil first) to knead the mixture into a dough.  Divide the dough into 8 parts.  Roll each portion into a ball between your hands and then flatten into a patty.

Spray a griddle or large skillet with vegetable oil.  Using low heat, melt the butter.  Fry the patties in the butter, using the lowest heat possible,  for 15-20 minutes per side until each side has a crisp reddish-brown crust.  Serve hot.
