3 cups zucchini, cut up 1 egg plant, peeled and cut up 1 onion, chopped 1 green pepper, cut into thin strips 2 cloves garlic, minced 1/3 cup olive oil 2 cups chopped tomatoes 1 bottle italian salad dressing 8 oz grated cheese (chedder and monterey jack) |

Saute the onions and garlic in olive oil until tender, but not brown. Add the zucchini, egg plant, peppers, and tomatoes. Pour in the salad dressing. Reduce heat and simmer covered for about 40 minutes, until vegetables are tender. Sprinkle cheese on top, cover and heat until cheese is melted. |
