Set oven rack on upper level and preheat over to 450. Coat a backing sheet lightly with vegetable cooking spray. Cut each potato lengthwise into 8 wedges.
In a large bowl combine olive oil, salt paprika and pepper. Add potato wedges and toss until well coated. Spread potatoes on baking sheet and roast for 20 minutes. Turn potatoes and roast an additional 10 - 15 minutes until golden brown. Serve immediately. |
