In a large bowl combine the Coca-Cola, olive oil, vinegar. Stir in the sugar until dissolved. Add the salt, mustard, oregano, parsley and garlic and stir well. Peel the shallots or small onions and slice thin. Separate slices into individual rings. Add the onion rings and beans to the Coca-Cola mixture and toss lightly with a fork. Pack the mixture into a quart jar, cover and refrigerate several hours or overnight.
May be served chilled like a relish or heated and served as a side dish. |
