Place the cookie crumbs in a large mixing bowl. (I usually use crushed vanilla wafers. You can also used the packaged graham cracker crumbs. Sometime you can find packages of Oreo cookie crumbs in the store -- this the great, just omit the cocoa from the recipe.)
MIx in 1 cup of the powdered sugar, the salt, cocoa and nuts. Add the honey and some of the rum. At this point you need to abandon the spoon and mix with your hands. Gradually keep adding rum as you mix the liquid into the cookie crumbs. Continue pouring and mixing until all of the mixture is getting moist and sticks together when you squeeze some in the palm of your hand but not so moist as to be soggy.
Put the remaining cup of powdered sugar in a small bowl. Pinch off pieces of the dough and roll it between your hands to form 1-inch balls. Dredge the balls in the powdered sugar. Store the balls in a sealed tin. They should be stored at least over night to "ripen" (don't worry about getting them stale, these babies get better with age!) Persons enjoying Dave's rum balls are advised to avoid open flames and heavy machinery. |
