Pie Crust

2 1/4 cups all-purpose flour
1 tsp salt
2/3 cup Crisco Oil
1/4 cup water

Put flour and salt in a large mixing bowl.  Add oil and water and stir until a thick dough is formed.  Blend any excess flour from the sides of the bowl into the dough.  If it stays crumbly and does not form a dough ball, add a little more oil.  If it is too moist, add some more flour.

If pie is to have a top, divide into two balls.  Place ball of dough between two sheets of waxed paper (important) and squash with you hand, then roll out with a rolling pin.  Peel off top sheet of paper, invert and place in pie pan, carefully peeling away the other sheet of waxed paper.  If the crust tears, it is not big problem.  It is easy to patch with the excess dough.

If you are making an apple or berry type pie, add the filling and put on the top crust and bake as usual.

If you are making a cream pie you will need to pre-bake the crust.  Use a fork to make some small holes in the bottom of the crust.  place in 425 degree oven for 5 - 10 minutes until it begins to brown.
Allow to fully cool before adding filling.
