Thoroughly stir together flour, sugar, soda, salt and cinnamon.
In a large mixer bowl, beat eggs until frothy then slowly beat in oil. Gradually add flour mixture, beating until smooth. Mix in carrots and nuts. Pour into three greased and floured 8-inch cake pans.
Bake in 350 degree oven for 25-30 minutes, or until done. Cool in pans for 10 minutes then remove from pans and cool completely on wire racks.
Prepare the frosting. In a small mixing bowl, blend butter and cream cheese. Gradually add sugar, beating until smooth and creamy. Stir in vanilla.
Fill and frost the three cake layers.
