Make oatmeal. Add maple syrup, melted butter, salt and coriander. Mix and let stand until lukewarm. Dissolve yeast in 1/2 cup of warm water and let it proof. Add yeast mixture to oatmeal. Add cider and remaining 1/2 cup of warm water. Stir in 3 cups of flour and beat into a batter. Add remaining flour a little at a time until you have a soft dough.
Turn dough out on a floured board and knead for 8 to 10 minutes. Place in a greased bowl and turn over to grease the top. Cover and let rise in a warm place until doubled in size. Punch down and turn out onto floured board. Shape into two loaves. Place in greased loaf pans and let rise until nearly doubled.
Bake in the center of a 375 degree oven for about 25 minutes, or until bread is golden brown and sound hollow when tapped.
