REESA'S FAMOUS BAKED BEANS

In an oven-safe pan (I use an iron skillet) combine:
2 cans pork & beans - 1/4 cup tomato catsup
1 sm. onion, chopped -1/4 cup red (catalina) french dressing
1/4 cup molasses or dark Karo syrup -1/4 cup dk.brown sugar
Stir until well mixed, top with bacon slices, and bake until thickened in a 275* oven (about 45 min), stirring about every 15 minutes to prevent sticking.
I think these are better if they are cooked a day ahead and chilled in the refrigerator until ready to serve. If you use an Iron pan to cook them in, transfer to a bowl before chilling.
JUST GOOD STEW

1 lb of beef, pork, lamb, or venison, cubed and tenderized;
1 cup flour with 1 tbsp. seasoning salt sifted into it.
4 med. potatoes, washed, peeled and cubed; 1 onion, peeled and chopped; 2 carrots, cleaned, sliced, and steamed; 2 sticks of celery cleaned, sliced and steamed. cooking oil.
Dredge meat in flour mixture and brown in minimum amount of cooking oil in deep skillet or dutch oven. Add onions and saut� for a few minutes, then add other vegetables, and water to cover all. Cover, reduce heat, and simmer until
vegetables are done and sauce is thickened. Serve immediately.
QUICK SKILLET CHILLI

Brown 1 pound of ground beef or venison. Add a chopped onion and 1/2 cup of water. cover and steam until onion is tender. Add 2 tbsp(more or less to taste) chilli powder, 2 cans chilli beans, 2 cans tomato sauce, 1 can tomato paste, and 1 cup water. Reduce heat to simmer. Now, carefully add sugar, a tablespoon at a time, stirring and tasting just until the acid from the tomato is balanced. Simmer until thickened, and serve.
This is a great quick main dish on a cold afternoon!
