Egg and Sausage Casserole

Ingredients:

1lb pork sausage, cooked, drained and broken apart
4 eggs
2 cups milk
6 bread slices, crust removed and cubed
1 tsp dry mustard
1/2 tsp salt
1/4 lb grated sharp cheddar cheese


Preparations:

Beat eggs and milk. Add remaining ingredients. Put in 2 quart casserole and refrigerate overnight. Bake covered, for 45 minutes in a 350*F oven. Uncover and bake for an additional 15 minutes.

NOTE: Double this recipe to fill approximately the size of a cake pan.

Variation: Saute fresh mushrooms in butter and add to mixture before baking.
