Creamy Wild Mushroon Soup Submitted by Amy
Ingredients:
2 cups sliced mushrooms (any variety will work) 1/2 cup heavy cream 4 cups vegetable stock 2 stalks celery, finely diced 1 small onion, diced 2 teaspoons ground sage 1/4 teaspoon black pepper pinch of salt 2 tablespoon dark soy sauce 1 tablespoon butter 1 tablespoon olive oil
Preparations;
In a covered pot, melt butter and add oil, heat. Add onion and celery, saute' until soft, add mushrooms, salt and pepper. Turn down heat and cover, allowing moisture to escape from this mixture, for about 15 minutes. Add the vegetable broth, soy sauce and sage. Simmer 5 minutes, testing seasoning, and add salt, pepper and sage as needed. Pour into blender or you can use a food processor in 2 batches, process until desired consistency. Place in a pot and add cream and heat though, but do not allow boiling. You may want to check the seasoning once more, since you added a new ingredient. Serve with a little drizzle of cream in spiral and cut from center to edge, this makes a fancy spider web-like design.
