TASMANIAN FISH PATTIES

Ingredients

6 portions striped trumpeter
3 oz. fat bacon
small onion
3 oz. soft white breadcrumbs
1/4 pint thick white sauce
Salt and pepper, flour, 1 beaten egg, fat for deep frying

Method

Cook the fish in the oven, remove the skin and bone and flake the flesh. Mix it with the finely-chopped bacon and onion and 1oz. of breadcrumbs. Stir into the sauce and season well. Shape into cones; coat in flour, brush over with beaten egg then toss in breadcrumbs. Deep fry a golden brown. Pile high on a dish and serve with melted butter sauce or anchovy sauce and slices of lemon.
