Jam Recipes

Melon and Passionfruit Jam

about 6 granadillas 1 small jam melon, peeled and chopped
6 cups (1� kg) sugar 1/3 cup of lemon juice
� cup of passionfruit pulp  

        Combine the melon with half the sugar in a large bowl and stand overnight.
        Combine the Melon mixture, and the remaining sugar with the juice, in a large saucepan. Stir over a low heat, without boiling, until all the sugar is dissolved. Bring to the boil, and boil, uncovered, without stirring for 30 minutes. Stir in the passionfruit and boil for a further 5 minutes, or until jam jells when tested. Pour into hot sterilized jars and seal when cold.

Makes about 6 cups.
