Loganberry Jam

1.4 kg ( 3lbs ) loganberries juice of half a lemon
1.4 kg ( 3 lbs ) sugar  

    Gently heat the loganberries and lemon juice in a saucepan without any water until the juice runs, then simmer for about 15 minutes, stirring occasionally until the fruit is very soft.
    Over a low heat, gently stir in the sugar until it is dissolved. Raise the heat and boil hard for about 10 minutes or until setting point is reached.
    Remove from the heat and skim off any scum with a slotted spoon. Leave to stand for about 10 - 15 minutes. Stir and ladle into hot, sterilized jars. Cover and seal. When cold, store in a cool dry, dark place.

Makes about 2.15 kg/4� lbs.
