Gherkins in Spiced Vinegar

1 �  litres water � cup coarse cooking salt
2 kg gherkin cucumbers  

                           Spiced Vinegar

1 litre ( 4 cups ) white vinegar 2 � cups sugar
2 cinnamon sticks 2 teaspoons black peppercorns
2 teaspoons cloves  

          Combine water and salt in a large saucepan and stir over a low heat until the salt is dissolved. Cool. Wash gherkins well, place in a large bowl, and cover completely with salt water, cover, and let stand for 48 hours.

        Drain gherkins, and rinse under cold water. Pack gherkins in a large sterilized jar, and cover completely with spiced vinegar. Seal.

       Spiced Vinegar:

                        Combine all the ingredients in a saucepan, and stir over the heat, without boiling, until all the sugar is dissolved. Bring to the boil, and simmer the mixture for about two minutes, stand 5 minutes, strain and cool.
