Fiery Chilli Oil
| 12 dried red chillies |
500 ml canola or corn oil |
| 1 tbsp cayenne pepper |
1� tbsp roasted sesame oil |
Finely chop
the chillies. Put them into a medium saucepan and pour in the canola or corn
oil. Simmer over a very low heat for 10 minutes ( do not let the oil get too hot
- it will spoil the keeping qualities ).. Remove from the heat and leave to cool.
Stir in the cayenne pepper and the sesame oil and leave for 12 hour for the
flavors to develop.
Line a funnel with a double layer of muslin and strain the
flavored oil through it into a sterilized bottle to within 3mm of the top. If
preferred, place one or two whole dried red chillies in the bottle. Seal and
label. The oil is now ready to use.
Makes about 480 ml.
