Blueberry Jam

Bay leaves enhance the sweet, spicy flavor of blueberries

1.4kg/ 3 lb blueberries juice of 2 lemons
4 small bay leaves 1 kg / 2 lb sugar
1 large apple

Stir the blueberries, lemon juice, peeled, cored and chopped apple, bay leaves and half the sugar together in a non metallic bowl, crushing the berries slightly. Cover and leave in a cool place for 6 - 8 hours.
Tip the contents of the bowl into a pan, add the remaining sugar, and stir over a low heat until the sugar is dissolved. Raise the heat and boil rapidly for 15 - 20 minutes, or until setting point is reached usually 105C - see the Hints section at my website

Remove from the heat, scoop out the bay leaves and skim off any scum. Leave to stand for 10 - 15 minutes. Stir gently, then pour into warm, clean dry jars. Cover and seal. Leave overnight to set. Store in a cool, dark, dry place.
