Black Cherry Jam

1 Kg black cherries Juice of 2 lemons
1 cup water 2� cups sugar

    Wash the cherries, drain well, and remove the stones. Put the lemon juice and water into a bowl. Add some sugar, then some cherries. Continue in this way until all the cherries and sugar are used up. Leave overnight.
    The next day, strain the syrup into a large saucepan and stir over a low heat until all the sugar is dissolved. Bring to the boil, add cherries, and boil for 45 minutes , stirring frequently, until setting point is reached.
    Remove from the heat, leave 5 minutes, and then pour into hot , sterilized jars and seal immediately.

Makes about 4 cups.
