Blackberry Jam 2

1 kg ( 2� lbs ) Blackberries juice of 1 lemon
1 kg ( 2� lbs ) sugar 2 tbsp  Gin ( optional )

    Place the blackberries and lemon juice ( if the blackberries are under ripe 1 lemon is fine, but if the berries are very ripe use the juice of 3 lemons ) in a large saucepan. Cover and heat gently, shaking the pan occasionally, for about 10 to 15 minutes until the fruit is soft.
    Carefully stir in the sugar, taking care not to break up the blackberries until it is dissolved. Raise the heat and boil hard for about 4 minutes, or until setting point has been reached.
    Remove from the heat and stir in the Gin if being used. Ladle into hot, sterilized jars. Cover and seal. When cool, store in a cool, dark, dry place.

Makes about 1.6 kg/3� lbs.
